1 1/4 c halved strawberries
3 T butter, melted
2 tsp grated orange rind
2 large eggs
1 1/2 C all-purpose flour
1 1/4 C sugar
1 tsp baking powder
1/2 tsp salt
Cooking Spray
2 tsp sugar

Directions:
1. Preheat oven to 400º
2. Combine first 4 ingredients in a blender, and process just until blended.
3. Combine flour, 1 1/4 C sugar, baking powder, and salt in a bowl; make a well in center of mixture. Add strawberry mixture to flour mixture, stirring just until moist.
4. Spoon batter into 12 muffin cups coated with cooking spray. Sprinkle with 2 tsp sugar. Bake at 400º for 20 minutes or until muffins spring back when touched lightly in center. Remove from pans immediately; place on a wire rack to cool.

Goes great with honey orange butter!.
Just add orange zest and honey to soften butter and mix then chill until ready.
