Ingredients: Puffs: 1/2 cup of butter ( no substitutes allowed at all) 1 cup of boiling water 1/2 tsp of salt 1 cup of all purpose flour 4 eggs unbeaten Filling : You can use vanilla pudding that is instant for this and then real whipped cream that you have made or bought in a can. Home made is much better.

Directions:Preheat oven to 400 degrees F. In med saucepan heat butter with boiling water stirring until butter is melted. Turn on low add salt and flour both at once and stir vigorously until mix leaves the sides of pan and forms a compact ball. Immediately remove from heat and quickly add eggs one at a time beating until smooth continue till all eggs are added and mixure has a satin like sheen. Drop mixture by tablespoon , 3 " apart on a greased cookie sheet. Shape each into a mound that points up in center. Bake 50 minutes without peeking. Remove with spatula onto cooling racks. When cool cut off top of puff and fill with pudding mix about a spoonful for each and then top with real whipped cream. put the top back on and sprinkle with confectioners sugar. |

Notes: It is very important in making cream puffs not to substitute add to or detract from the recipe. It must be followed exact. It is also important never to open the door of the oven or they will fall. This is one of my families favorite desserts
