Mom's Turkey Soup Recipe

1 turkey carcass (broken up)
3 cups finely chopped carrots
3 cups finely chopped turnip
6 cups cubed potatoes
2 containers chicken broth
Salt & pepper
2 bay leafs
1 cup barley
1 finely chopped onion
1 tsp sweet basil

Directions:
Directions:
Simmer turkey bones in chicken broth for 3-4 hours with onion and bay leaves, salt and pepper. Strain, reserving the stock for the soup. Separate the meat from the bones and discard bones. Pour stock back into pot and add the onion, carrots, turnips and barley and basil, boil for 1/2 hour and then add potatoes and turkey. Continue simmering until vegetables are done. Can add more salt or pepper as desired.

Although my children never got to meet their Nanny Clee, she would have loved them beyond measure and would have enjoyed making this soup for them. This is the way my mother made her turkey soup only I have added the sweet basil to it along the way.
