1/2 cup chopped onion
1/3 cup of honey
1/2 cup of dry red wine
2 tbspn balsamic vinegar
2 tbspn pineapple juice
1 tbspn low sodium soy sauce
1 tbspn of mirin (sweet rice wine) or sweet white wine (riesling)
2 cups fresh pineapple
1 1/1 pounds mahi mahi steaks cut into 24 one inch pieces
24 cubes of fresh pineapple
24 pieces of green bell pepper one inch pieces
1 tbspn of sage chopped fresh or dried rubbed sage
1/8 teaspoon of salt
1/4 teaspoon of black pepper
Cooking spray
chopped fresh chives

Directions:
Combine the chopped onion and honey in a medium nonstick skilletover medium heat. Cook 12 min or until golden brown, Add red wine and the next 4 ingredients, cook ten minutes. Stir in diced pinapple cook five min and keep warm.
Prepare the grill
Thread 3 mahi mahi pieces, 3 pinapple chunks, and 3 bell peppers alternately on 8 12 inch skewers. Sprinkle kebabs with sage, salt, and black pepper. Place kebabs on a grill rack coated with cooking spray ; grill kebabs 15 min or until fish is done turning every five min. Serve with pineapple sauce and sprinkle with chives if desired.
