Ingredients: 1 Can Salmon 1 Can Rotel Tomatoes 1 Can Ciced Tomatoes 6 Boiled Eggs 1 Heaping Tablespoon Of Roux 1 Bell Pepper 1 Small Onion 2 Tbsp Of Oil Approximately 2 And 1/2 Quarts Of Water

Directions:Add oil to a large pot, begin heating---add roux and stir until roux becomes heated through and through---add bell pepper and onion---stir while watching for vegetables to soften and for roux to begin mixing with veges. Add Rotel, diced tomatoes and water---heat to boiling and season with salt,accent and black pepper. Add salmon and boiled eggs, cover and turn fire off. Eat over rice |

Notes: Aunt Ruby came up with this recipe when we were all small kids---She told me that she didn't know what to cook for us one day, so she looked in her pantry and this is what she came up with---Although, at that time, she didn't use Rotel and diced tomatoes---she used tomatoe paste then--but through the years she has improved on it.----Whenever Don was in Veit Nam and it was soon time for him to be coming home, Moma wrote him a letter and asked him to tell her what it was that he would like for her to cook for him whenever he would get home---sort of like a welcome home meal---well, he wanted salmon soup--I hope y'all like it
