1 1 /2 lb. lean ground turkey
2 large egg whites
1 heaping cup cornbread stuffing mix
1 medium onion or a few tablespoons of minced onion flakes
1 tsp. of taco seasoning.... I used chipotle seasoned
2 2/3 oz. of diced jalapeņos... I used the pickeled slices and chopped them
8 oz. enchilada sauce

Directions:
Preheat oven to 375 degrees. Coat a broiler pan with cooking spray. Combine beef, turkey, egg whites, onion, stuffing mix, chili powder, cumin, chilies and 1/2 enchilada sauce. Shape into a loaf on the broiler pan. Cook for 1 hour. Top with remaining enchilada sauce and cook another 5 minutes.
