1 c bottled salsa
1/4 c fresh chopped cilantro
1/4 c fresh parsley
1 T lime juice
2 cloves garlic chopped

2 c shredded cooked chicken
1/2 c co-jack cheese
8 7" flour tortillas

Directions:
Directions:
Spray pan with oil 11 x 7...Oven to 350º

In Food Processor: salsa, cilantro, parsley, lime juice, garlic.

In bowl: Mix shredded chicken, 1/2 of the above salsa mixture and 1/4 c cheese. Spread some of this chicken mixture down the middle of each of the tortillas. Tuck ends and roll up chicken mixture in the tortilla. Place in baking dish seam side down. Put some remaining salsa over each enchilada and sprinkle with cheese. Bake 20-25 min......6 servings

Fresh cilantro has a lot of flavor and really makes this dish. I always make a double batch of the salsa because it is good with chips and other things. I usually use a medium salsa but you could kick it up with hot sauce or a hot salsa if you like. Great for that left over chicken.
