1 container yellow or red cherry tomatoes
1 bunch fresh basil
1 pkg of fresh mozzarella (~ 8 oz)
Good Extra Virgin olive oil
Bertolli Italian Glaze with Balsamic Vinegar
Fine Grain Sea Salt

Directions:
Slice cherry tomatoes in half (long-ways). Place on flat platter or casserole dish to cover bottom of platter. Grate mozzarella cheese and sprinkle over top of tomatoes. Finely chop the fresh basil (can use food processor) and sprinkle over top of mozzarella. Drizzle the EV olive oil to cover top of mixture. Drizzle Italian glaze in desired pattern just before serving (I usually do a zigzag pattern and repeat to cover). Sprinkle fine sea salt to taste.

If you have fresh tomatoes from garden, you can just slice the tomatoes, then slice mozzarella to place 1 slice on top of each tomato slice. Drizzle olive oil on slice, then place a whole basil leaf on top. Drizzle a little more olive oil and then Italian glaze as last step. This is the version you will see online if you google caprese salad.

If you don't have fresh basil or in a hurry, you can use dried basil. Also, if you can' find Italian glaze, you can use a nice baslamic vinegrette as a substitute. I find it with the baslamic vinegar section at Kroger.

You can double, triple recipe as needed.
