Ingredients: 3 eggs 1/2 cup oil or you can subsitute applesauce for oil 1 1/4 cup water I can of eagle Brand Condensed Milk Icing: 1 12 oz. can evaporated milk 1 1/2 cups sugar 3/4 cup butter 4 egg yolks, slightly beaten 1 1/2 tsp. vanilla extract 1 7 oz. package shredded coconut about 2-2/3 cups 1 1/2 cups chopped pecans

Directions:Mix cake all up and bake for 20-25 mins at 350 degrees. Also I use a bigger pan than the regular cake pan so my cake will not be as thick. As soon as cake gets done pull it outta of the oven and take a wooden spoon handle (well that is what I use) I poke holes all over the cake while hot then I add the whole can of eagle brand milk all over the cake. Icing: Place milk, sugar, butter, egg yolks and vanilla in large saucepan Stirring constantly, cook on medium heat 12 minutes or until thickened and golden brown. Remove from heat. Stir in coconut and pecans. Cool to room temperature and of spreading consistency. I usally don't let it cool all the way down I like it still warm on mine so it goes into the cake |
