2 - 3 c. uncooked rice
1 1/2 tbsp. vanilla
2/3 c. sugar
2 cartons Cool Whip - may use Light or Sugar Free
1 c. (or more if desired) mini marshmallows
2 large cans crushed pineapple, drained
1 jar of cherries, rinsed and cut in half (optional)

Cook rice - you want rice to be soft - cool in fridge. (I have a rice ball that I use. Cook one cup at a time for 25 minutes, rinse and cool).
Mix vanilla and sugar into cooled rice. Add drained, crushed pineapple. Rinse cherries well (or rice will be pink) and add to rice mixture. Mix in Cool Whip and marshmallows.

Serves enough for a large group or picnic.
This is a sweet side dish to serve at a big gathering or just for the family. My grandma made this dish for her kids and they learned to like rice eating this yummy dish.
