∏ pound smoked salmon, coarsely chopped
3 Tablespoons finely chopped red onion
1 ∏ Tablespoons capers, drained
3 Tablespoons fresh lemon juice
1 ∏ Tablespoons extra-virgin olive oil
Freshly ground black pepper
Sliced pumpernickel bread, toasted challis bread or rye crackers for serving
Dill sprigs for garnish

Directions:

1. Combine the salmon, onion, capers, lemon juice, olive oil and pepper to taste in a medium bowl and mix together gently.
2. To make Dill Sauce: Combine the mayonnaise, mustard and dill in a small bowl and mix together. Add the milk and sugar and mix again.
Taste and adjust the seasons, if necessary.
3. To serve, spread a bit of the Dill Sauce over the toasts or crackers, top with a spoonful of the tartar, and garnish with a dill sprig.
