2 flour tortillas
1 pound chicken breasts
1 small onion, diced
2 t. brown sugar
1/2 t. cumin
1 t. cornstarch
1 cup cubed fresh pineapple
3 T. olive oil, divided
1 medium green pepper, diced
2 T. soy sauce
1/2 t. chili powder
1/4 t. pepper
2 T. lime juice
1 medium tomato, diced

Directions:

In large skillet, fry tortillas in 2 T. oil on both sides till golden brown. Drain on paper towels. Cut into 1 inch strips. In same skillet, cook the chicken, green pepper, onion, soy sauce, brown sugar, chili powder, cumin and pepper in remaining oil until done. In small bowl, combine cornstarch and lime juice until smooth. Stir into skillet. Bring to a boil; cook and stir until thickened. Stir in pineapple and tomato; heat through. Serve with tortilla strips.
