2 lbs. fresh string beans
6 slices of bacon
1/2 lb. smoked turkey necks
6 medium potatoes, cut in quarters
1 small onion

butter or margarine

Directions:
Directions:
Remove both ends of each string bean, then snap each bean into 1" pieces. Wash beans. Set aside. In the meantime, wash smoked turkey necks and put them in a pot and cover them with water. Add the onion, salt and pepper. Fry the bacon until crispy, add the bacon and bacon fat to the pot. Allow to cook 1/12 hours then add string beans, After cooking for another hour, add potatoes. Cook until tender.

Not: Use your own judgement to timing for a better result for tenderness.
