1-1/2 lb. fresh okra
2 cups corn meal
2 eggs, beaten
salt to taste
2 cups oil

Directions:
Wash okra. Pat okra dry with paper towel. Cut the top stem and tip end off each pod of okra, then cut each pod into 1/4 inch pieces. Salt okra to taste. Set aside. Prepare pot or fry pan with oil for deep frying. Put okra pieces into egg batter, then remove okra after coating each piece and put into the corn meal. Toss okra until well coated all over. Put coated okra into hot oil and fry for about 45 seconds or less until okra is golden brown. Remove from hot oil and place onto a plate that has been lined with absorbent towels.
