1 small Ricotta
3 egg whites
1 c. sugar
2 Tsp. vanilla
1 Tsp. lemon juice

Crust:
1/3 c. melted shortening
1/4 c. sugar
3 egg yolks- add a little milk
1 Tsp. vanilla
1 1/4 c. flour
1tsp. baking powder

Directions:
Crust - Mix together melted shortening and 1/4 c. sugar. Mix egg yolks with a little milk and then add to previous ingredients. Then add 1 tsp. vanilla, flour and baking powder. Mix and press into a 9" pie plate.
Filling- Mix together ricotta, egg whites sugar, 2 tsp. vanilla and lemon juice. Pour into pie plate. Bake for 1 hour at 350 degrees (325 if your oven cooks hot) or until filling slightly browns and toothpick comes out clean.
