6 fish fillets
1/2 c. flour
1 tbsp. vegetable oil
2 tbsp. butter
1/4 lb. mushrooms (1 package)
1 can pitted black olives
1 cup artichoke hearts
1 garlic clove, chopped
1 tbsp. chopped parsley
Salt and pepper
Lemon juice to taste

Directions:
Dip fish in flour. Heat oil and 1 tbsp. butter in a large saucepan. When hot, add fish over medium heat. Turn over and season well, Remove from pan and keep warm. Heat remaining butter in pan. Add mushrooms, olives, artichokes, garlic and parsley. Season. Cook 4-5 minutes over medium-high heat. Sprinkle in lemon juice and saute 30 seconds. Serve fish. Pour saute over fish. Garnish with lemon slices.

A delicious dish, even if you don't care much for artichokes. Serve with veggies or white rice.
