• 2 slices whole wheat bread
• 1 tbsp fresh lemon juice
• 1/2 cup skim milk
• 1/4 tsp ground pepper
• 1 lb extra lean ground beef
• 1/4 tsp ground celery seed
• 1/2 cup chopped green pepper
• 1/4 tsp ground sage
• 1/2 cup chopped green onions (& tops)
• 1/4 tsp dry mustard
• 1 tsp fresh minced parsley
• 1/4 tsp garlic powder
• 1/2 cup chopped celery
• 2 medium fresh tomatoes, chopped
• 2 egg whites, slightly beaten
• 2 tbsp catsup

Directions:
Directions:
1. Tear bread into small pieces and cover with milk. Allow to stand 5 - 10 minutes. Combine remaining ingredients.
2. Shape mixture into a loaf in a small roaster or 2 qt casserole dish. (Can drizzle with additional catsup and sprinkle with a small amount of brown sugar).
3. Bake uncovered at 350º for 1 1/2 hours. Cool slightly before moving to serving plate. If desired, garnish with green pepper strips and fresh sprigs of parsley.
