1 Lb Navy Beans Soaked Overnight Then Rinsed 3 Times
1 Lb Picnic Ham
1 Lb Pickled Pork
2 Onions Finely Chopped
3 Cloves Garlic Chopped
8 Oz Can Tomato Sauce
1 Cup Green Onions Finely Chopped
1 Cup Parsley, Finely Chopped
1 Tbsp Sugar
1 Tsp Cayenne Pepper
1/4 Cup Vegetable Oil
1/4 Cup Flour

Directions:

Cover beans with cold water and cook over medium heat until soft, about
1 1 /2 hours. Puree some of the beans in a blender, reserving cooking liquid.

Cook ham and pork until tender and pulls away from the bone easily. Remove meat from pot, reserving cooking liquid. When cool enough to handle cut meat into small pieces.

Make a light brown roux with the flour and oil. Add the onions and garlic to the roux and cook until soft.

Add cooking liquid from the beans and meat to the roux. Ad the beans, meats, tomato sauce, sugar and cayenne pepper. Simmer for one hour adding water as needed. Add salt to taste.

Add green onions and parsley and cook for an additional 20 minutes.

Serve with crackers.
