4 Large Egg Yolks
1 Cup Extra Fine Baker\'s Sugar
1/2 Teaspoon Kosher Salt
1 Teaspoon Real Vanilla Extract
1/4 Cup Sherry
1 Cup Heavy Whipping Cream
1 Large Can Pear Halves - Drained and Chilled

In a double boiler or in a heavy-bottomed saucepan, whisk egg yolks, sugar, salt, and sherry. Continue to whisk until smooth. Cook on Medium heat for 8 to 10 minutes until sauce thickens, stirring constantly. Remove from heat and whisk in the real vanilla extract. Let the mixture cool completely.
In the bowl of a stand mixer (or with a hand mixer), whip the cream until it stiff peak. Make sure NOT to over whip the cream. When sauce has cooled completely, gently fold in whipped cream. Serve over chilled and drained pears and dress with a fresh sprig of Mint
