Ingredients: For the Rolls 1 Lb Fish Filet (Halibut works best, especially if in AK, but Mahi and Swordfish work well if in HI, so what ever is fresh or local should work fine...just make sure it is a firm white fish) 8 oz. softened Cream Cheese (light is fine) 1 bag shredded sharp cheddar 1/2 lb bacon, cooked crisp 2 jalapeños, diced fine 1 pkg egg roll wrappers old bay seasoning, salt and pepper to taste

Directions:Heat oven to 350º, line a Pyrex baking dish with foil...lay fish filets on foil and sprinkle Old Bay, salt and pepper...Bake fish until it flakes, drain off any liquid and let cool. Mean while, fry the bacon until crisp, set aside to drain on a paper towel. Mix cream cheese, cheddar and diced jalapeños until smooth...add bacon and fish. Mix well breaking up large chunks of the fish. Lay out 1 wrapper, and fill with about 1/4 cup of the fish filling and roll, egg roll style...(you may want to keep a small dish of water on hand to use as a glue to seal the edges of the wrapper) place each roll on a wire rack and keep covered with damp paper towel as you roll the rest...dont let them dry out otherwise the skins will crack. When all are rolled...at this point you may freeze in a sealed ziploc bag for later use or fry them in hot oil until golden brown and delicious. Place rack on to drain and cool slightly. For the sauce 1 jar of jalapeño jelly (can be found in most grocery stores in the jelly or condiment section) 3 TBSP Chili Garlic Sauce (found in the Asian section of most grocery stores, comes in a short glass jar) Dump all the jelly into a microwave safe bowl, and heat for about 30 seconds, just til it loosen's up...then add the Chili Sauce..(you may want to start with 1 TBSP of the Chili Sauce...I like it spicy) To serve, cut the egg rolls in half on a bias...arrange on a platter, and place the dipping sauce in a few bowls around the platter...enjoy |

Notes: This recipe can easily be adjusted depending on your taste, if you like bacon add more, not a fan of jalapeños...omit them or substitute bell pepper. Don't worry about making too many, there will be no left over's
