8 Medium Baking Potatoes
2 Tsp Oil
3/4 Cup Grated Colby Jack Cheese
1/2 Cup Sour Cream
1/4 Cup Butter At Room Temperature
1/2 Cup Chopped Green Onions
1/4 Cup Cooked Bacon Bits
1/2 Tsp Salt
1/4 Tsp Pepper

Directions:
Directions:
Preheat oven to 425º. Pierce potatoes with a fork and rub with oil. Place on baking sheet; bake until tender, about 45 minutes. Reduce heat to 350º. Remove potatoes from oven, cut slit lengthwise on top of each potato. Carefully scoop out flesh, leaving thick shell. Mash scooped out potato. Stir in 1/2 cup of cheese, sour cream, butter, green onions, bacon bits, salt and pepper. Carefully stuff each potato shell with mashed potato mixture. Sprinkle with remaining cheese. Place on baking sheet, bake until potatoes are hot and cheese is melted, about 25 minutes. Serve Hot.
