1 c. shortening (i.e. Crisco)
1 egg
1 c. sugar
2 Tbsp. vanilla
3 c. flour
1/4 tsp. salt
1 tsp. baking powder
Jam of choice (strawberry, blackberry, etc)
Nuts or coconut (optional)

Directions:
Directions:
Cream shortening, egg, sugar and vanilla.
Sift flour, salt and baking powder together and add to creamed mixture.

This will be crumbly. Sprinkle onto a greased baking sheet. Put wax paper over the top and roll out with rolling pin. Remove paper and spread with jam.
Bake at 350º for 20-30 minutes.
When cool, spinkle with coconut or nuts.
