1 Box Yellow Cake Mix (2 Large Tbsp Reserved)

Filling
1 Medium Bag Coconut
1 Teaspoon Vanilla
2 Cups Sugar
Milk

Frosting

2 Egg Whites
1/4 Cup Sugar
3/4 Cup White Karo Syrup
1 1/4 Tsp Real Vanilla
1/4 Tsp Salt

Directions:

Cake
Bake cake as instructed on box reserving 3 large tablespoons of batter. Pour into two 9 inch cake pans. When completely cooled cut each cake in half.

Filling
Mix all of the ingredients together in a pot adding enough milk to become the consistency of oatmeal. Cook medium to high stirring until it begins to thicken, then add vanilla and batter. Continuing cooking until it becomes a bit more thick. Cool completely. Put filling between each of the 3 layers and then top with the fourth.

Frosting
Put ingredients into mixing bowl and beat at high speed for 10 minutes or until very stiff. Frost top and sides of cake.

This is the best coconut cake that I have ever tasted. Whenever someone in the family or even some of my friends wants a cake they request Aunt Ren's Coconut cake.
