1.5 lb. of medium ribs, cut to 1-1.5 inches
Water
1 onion
1 piece of ginger (~2 inches)
1/2 c. of cooking wine
1/2 c. of low-sodium soy sauce (Costco),
1/4 c. of sugar,

Directions:
Directions:
Add ribs, onion, ginger , cooking wine to a sauce pan, add enough water to cover. Bring to boil in medium heat. Then use low heat to simmer for 1.5 hours. then cool. Pour the content into a colander (be careful, hot sometimes!), drain out the liquid. The ribs can be then further cooked immediately or next day.
In the same sauce pan, add soy sauce, sugar,and mix well. Use low heat to cook to simmer. Then add the cooked ribs, cook at medium heat. Using a spatula, try to coat every piece meat with sauce, add more soy sauce or water if the content is too dry. When the sauce gets sticky, turn off the heat, and serve!

Initially, I created this easy-cooking dish to suit my busy work schedule and in the same time,still try to satisfy my family's meat-cravings. It was a hit in my family and among our friends/neighbors as well.

It had no added fat (even got rid of some fat when boiling), easy to make, most of all, delicious! My son Nicholas and my husband like to serve it with rice.
