1 c. mashed bananas (more is better than less)
1 1/2 c. sugar
3/4 c. margarine / butter (half of each provides the best density. All butter is too light and all margarine is too oily)
2 eggs separated
2 1/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
1/2 c. sour milk (add 2 tbsp vinegar to milk)

Preheat oven to 350º. Cream sugar and margarine/butter until light and fluffy. It is best to refrigerate the bowl, butter and margarine prior to mixing to keep as cold as possible. Add egg yolks and mix well. Sift flour, baking soda and baking powder together. Add dry ingredients and milk to mixture alternately, starting with dry (3 dry, 2 milk).
In a separate bowl beat egg whites until they form stiff peaks. Be careful not to over beat as they will dry out. Gently fold egg whites into mixture.
Spray pans with cooking spray and lightly flour.
Bake in preheated oven for 3/4 -1 hour. Tester should come out clean.
Makes one large tube pan or 2 loaf pans or 6-8 "mini" Bundts.
Add fresh raspberries to mix as it is placed in pans for a wonderful variation.
