15 small red potatoes, roasted until tender, then cooled

1 c shredded sharp cheddar cheese

1 c mayo

1/2 c chopped green onion

2 tbsp copped fresh basil

10 slices crisp-cooked bacon, crumbled

chipotle-flavoured hot sauce

Directions:
Directions:
Preheat oven to 400. Cut each potato in half. cut a thin slice from the bottom of each potato half so they will sit flat. Bake just until a knife comes out cleanly. Let cool. Scoop the pulp from potatoes and place in a medium blow. Mash the potato pulp, then stir in the cheese, 1/2 c mayo, onions, basil and bacon. Spoon the potato filling back into the potato shells, place on the baking sheet and broil 3 minutes or until golden and heated through. Meanwhile combine the remaining mayo with 4-6 drops of chipotle sauce and serve on the side.
