4 large boneless skinless Chicken breasts, cut up (cube like works good)
2 jars coconut curry sauce
1 large bag of frozen veggies
6 cups jasmine or basmati rice (cooked)
1 large onion, sliced thinly
1 tsp. curry powder
1/2 cup water

Directions:
Directions:
Spray Crock pot with cooking spray, set to low
throw into crock pot, chicken, veggies, onions, curry powder and water. Stir and let cook for 15 minutes. Add one jar of curry sauce and stir. let cook on high until chicken is done and veggies are tender. Add other jar of curry sauce, stir and turn back to low.
Serve over rice, with salad.
