Directions:
Make the yellow custard: in 1 c. milk beat the egg yolks, 5 tbsp. sugar and cornstarch and beat thoroughly. Add the 2nd c. of milk and beat again. Place in top of double boiler with lemon peel. Stir constantly with a wooden spoon over medium heat until thick. Cool and remove lemon peel.
Make one pkg of chocolate pudding using only 1 1/2 c. milk. Set aside and cool. Cut sponge cake into 3 layers. Place one layer in deep bowl and sprinkle with rum. Spread yellow custard on top. Place second layer of cake on top and sprinkle with rum. Spread chocolate pudding and cover with third cake layer. Refrigerate. Sprinkle 3rd layer of cake with rum. Make a second batch of chocolate pudding using 1 1/2 c. milk. Spoon on top layer while still hot. Let cool and then refrigerate. Whip 1 1/2 c. heavy cream with 1 tbsp. confectioners' sugar and decorate around the cake.

Personal Notes:
Yellow cream and first batch of chocolate pudding should be cool. Instead of a sponge cake, you can use lady fingers.
