1 pkg Rice Paper (found in Asian section of grocery store; comes as 6-8 in. round opaque sheets)
1 jar of Hoisin Sauce for dipping (found in Asian section of grocery store)

Filling
Leftover chicken meat torn into strips (or use store-bought BBQ chicken for a real time-saver)
1 English Cucumber (cut into 3-4 in. strips)
1 Red Pepper cut into 3-4 in. strips
1 Carrot (shredded)
Toasted Sesame Seeds (optional)
Mesclun Salad greens (or any type of lettuce)

Directions:
Directions:
To re-hydrate, take one rice paper and soak in a plate of hot water until softened (approx 10-20 seconds)
Remove from water and lie flat on cutting board
Place a few strips of chicken, cucumber, red pepper along bottom-third of rice paper
Add some shredded carrot
Sprinkle with sesame seeds
Cover with some mesclun salad greens
Fold bottom of rice paper up over the filling
Continue rolling the ingredients tightly in the rice paper, tucking in the ends to create your wrap (like a burrito)
Dip in hoisin sauce (to taste)
Enjoy!

(Tip: if you are making several rolls, cover the completed rolls under a moistened paper towel to prevent them from drying out while you work)
