1 lb. ground pork
1 lb. ground turkey
1 small onion chopped finely
1 stalk celery chopped finely
1/2 tsp. salt
1/2 tsp. pepper
1 egg beaten
1/2 c dry bread crumbs

1 lb. white mushrooms sliced
1 onion chopped
2 stalks celery chopped coarsely
1 tbsp. butter
1 c. arborio rice

2 tins beef broth soup
1 tin cold water
2 tsp. dried oregano
Directions:
Directions:
Combine first 8 ingredients and shape into balls (makes 36 meatballs) Bake in 350 oven for 20 minutes. Remove and drain meatballs on paper towels.

Saute onion, celery and mushrooms in 1 tbsp. butter. Cook only 2-3 minutes. Remove and place into a large baking dish.
Keep butter in saute pan and add rice. Cook until rice turns lightly golden. Put rice into casserole dish.
Now add broth, water and oregano.
Stir well and bake in 325 oven for 30 minutes.
Remove and add meatballs. Return to oven and bake for 15 minutes or until all liquid is absorbed.
