6 medium to large sweet potatoes
2 large bags of small marshmallows
1 1/2 cups of brown sugar
2 sticks of butter or yogurt butter

Preheat oven to 350ºF
Spray a large casserole dish with cooking spray set aside
Cut sweet potatoes into quarters and boil in large pot until soft
once softened run under cold water until cool enough to touch and remove skin.
In a large bowl combine potatoes, 1 cup of brown sugar and 1 stick of butter until well blended.
spread evenly one layer of sweet potato mixture in casserole dish, then spread marshmallows on top, add another layer of sweet potatoes then another layer of marshmallows, repeat until potatoes are gone, and you end up with marshmallows on top, then place in oven for about 10 minutes or until marshmallows are a golden brown and melted.
