Persian Kabobs Recipe

1 lb. ground beef
1 lb. ground lamb
1 large yellow onion
1 clove garlic
1 egg
1/4 c. panko bread crumbs
1 tsp. ground turmeric
1/2 tsp. paprika
2 tsp. salt
1 tsp. ground black pepper
1 tbsp. butter (or olive oil)
Pinch of saffron

Directions:
Chop the onion in a food processor. Put the chopped onion in a strainer and press out liquid. Put the drained onions in a large bowl. Mince the garlic and add it to the onion. Add the ground meat, egg (lightly beaten), bread crumbs, turmeric, paprika, salt, and pepper to the bowl, and mix everything thoroughly. Form the meat into long patties (about 1/6 lb.) and put them onto skewers or place into a grill basket.
Melt the butter and mix in the saffron, or if you're using olive oil, mix the saffron with the oil. Brush the kebabs with the butter or oil.
Cook the kebabs on a grill until the meat is cooked through (medium).
I suggest serving the kebabs with rice (saffron rice or lima bean rice) and cucumber yogurt salad.
