1 pkg. frozen square hash brown potatoes (just the plain ones)
2 c. shredded cheddar cheese
1 16 oz. container of sour cream
1 can of cream of mushroom soup (cream of chicken works)
1 medium onion (sweet or yellow)
1 cup of butter
1 large bag of Lays potato chips
Salt and pepper
2 chicken breasts
9X13 inch pan

Preheat oven to 425º. Chop onion and place in large mixing bowl.
Place butter in a microwaveable bowl and melt butter. Mix together the potatoes, onion, butter, sour cream, cream of mushroom soup (or chicken) and 2 c. of cheese, 1 tsp. salt, and 1 tsp. pepper. Set aside. Sprinkle some salt and pepper on the breasts and cook them on the stove until completely cooked. Let cool and then cut or shred into small pieces. Place in bowl and mix together with the rest of the potato mixture. Pour mixture into pan. Take the bag of potato chips,open a small hole in the top,and completely crush all of the chips. Pour the crushed chips on top of the casserole. Place casserole on the bottom rack for 1 hour. Take out and let cool for 5 minutes,then enjoy

Tip: Keep checking the oven to ensure the chips are not burning, if they get a little too brown,just place a piece of foil on top of the casserole, but do not close it around the sides. Just place it on the top. And if you have to do this,when you take it out to let it cool,take the foil off so the chips do not get soggy.
