12 corn tortillas
1 lb. ground beef or turkey
2 c. shredded Mexican blend cheese
1 tbsp. olive oil
2 cloves minced garlic
1/2 medium minced onion
2 tbsp. of chili powder
2 tsp. ground cumin
1 tbsp. flour
1 c. broth or water
Salt and pepper to taste

Preheat oven to 375º. Heat olive oil on medium heat in large skillet. Saute onion and garlic until soft. Add ground meat and cook until browned and crumbly. Add chili powder and cumin. Stir in flour and cook until absorbed. Slowly add broth and stir until mixture has gravy-like texture. Lower heat to a simmer. Add salt and pepper to taste. Warm tortillas one at a time in meat mixture for a few seconds until pliable. Arrange tortilla in a casserole dish and spoon a bit of meat mixture and sprinkle a tbsp, of cheese inside. Roll tortilla and repeat with rest of tortillas until all are rolled and arranged in a row in casserole. Top with pan drippings and remainder of cheese. Cover with foil and heat in oven for 10 minutes.
