4 - 4 oz. boneless skinless chicken breasts

1/4 tsp. pepper

1/2 tsp. onion powder

1 tbsp. safflower oil

1 c. diced shallots

2 tbsp. white balsamic vinegar

2 tsp. low sodium soya sauce

1 1/2 tbsp. liquid honey

1/8 tsp. red pepper flakes

3/4 c. fresh raspberries

Directions:
Season breasts on all sides with pepper and onion powder.
In large nonstick skillet, heat oil on medium heat, add chicken and cook for 5 minutes. Turn chicken and add shallots. Cook stirring occasionally for another 5 minutes. Transfer chicken to a warm serving platter and cover to keep warm.
Keep shallots on medium heat and then add the vinegar, Soya sauce, honey and pepper flakes. Stir to combine and cook about 30 seconds.
Add raspberries and cook for another 30 seconds until berries soften slightly. Spoon berry mixture evenly over chicken breasts. Serve with rice, couscous or bulgur and a side salad.
