1 frozen bag shoepeg corn or 1 can shoepeg corn (drained)
1 can cream of celery soup
1 can french green beans (drained)
1 small onion chopped
1 small jar diced pimento
1 small can finely chopped black olives (drained)
8 oz sour cream
1 12 oz bag shredded cheese (any flavor)
salt and pepper to taste

Directions:
Directions:
Mix all ingredients together the night before and place in covered bowl and refrigerate. Place in casserole dish. Melt 2 sticks of butter and crush 2 sleeves of ritz crackers and stir into butter. Spread topping over casserole. Bake at 350º for 1 hour or at 400º for 30 minutes and then 350º for 15 minutes.
