2 tablespoons chopped onion
1 tablespoon chopped parsley
2 tablespoons butter
8 medium carrots, cut into 1 or 1 1/2" slices
1 can beef broth
Dash nutmeg

Directions:
Directions:
In saucepan saute onion and parsley in butter for about 5 minutes. Add carrots, beef broth and nutmeg. Cover and cook over medium heat for 25 minutes. Uncover, continue cooking for about 20 minutes or until carrots are tender and sauce forms a glaze on carrots. Stir occasionally. (Watch carefully during the last few minutes to prevent sticking.)
