1 c. milk
3 Tbsp. sugar
1 tsp. salt
1 pkg. yeast
3 c. flour
1 egg white
3 Tbsp. shortening, melted

Directions:
Directions:
Scald milk. Add sugar, salt, and shortening. Cool to lukewarm. Dissolve yeast in mixture and stir. Add 1.5 c. flour and beat smooth. Add stiffly beaten egg white and remainder of flour. Knead lightly, using as little flour as possible. Place in well-greased bowl. Cover and let rise in warm place, free from draft, until doubled in bulk, about 1.5 hours. Shape into rolls. Place in well-greased pans. Cover and let rise until light, about 40 minutes. Brush with egg yolk which has been mixed with 1 Tbsp. milk. Bake in hot oven at 450º about 10 minutes.
