6 med. size sweet potatoes
1 stick butter
1.5 tsp. vanilla
1.5 c. sugar

Directions:
Directions:
Parboil quartered sweet potatoes (about half done) in small amount of water. Melt sugar, butter, and 1/2 c. water potatoes were cooked in. Add vanilla. Place potatoes in glass baking dish. Pour butter/sugar mixture over potatoes. Bake at 425º until candied.

Nanny always made candied yams at Thanksgiving and Christmas. She didn't leave her recipe behind. Momma found this one and it's really close.
