1 lb. ground beef
1.5 c. frozen yellow corn
19 oz. jar enchilada sauce
4.5 oz. jar diced green chiles
6 oz. package corn tortillas, cut into 1/2" strips
1/2 c. shredded cheddar cheese

Directions:
Directions:
Preheat oven to 375º. Spray 9 x 13 pan with Pam. In large skillet, brown beef for 8-10 minutes. Add corn, enchilada sauce, and green chiles. Mix well. Spoon 1/4 beef mixture into pan. Spread 1/3 tortilla strips. Spoon 1/4 beef. Top with 1/3 tortilla strips. Spoon 1/4 beef. Top with 1/3 tortilla strips. Spoon remaining beef mixture over top. Cover with foil and bake for 40 minutes. Remove foil. Sprinkle with cheese. Bake for another 5 minutes.
