1.75 tsp. pepper
5 (4 oz. each) cubed steaks
1 sleeve crackers, crushed
1.25 c. flour
1/2 tsp. ground red pepper
1/2 tsp. baking powder
4.75 c. milk
2 large eggs

Sprinkle 1/4 tsp. salt and 1/4 tsp. pepper over steaks. Combine crackers, 1 c. flour, 1 tsp. salt, 1/2 tsp. pepper, red pepper, and baking powder. In separate bowl, whisk together 3/4 c. milk and eggs. Dredge steaks in cracker mixture, dip in egg mixture, and then dredge again in crackers. Pour 1/4 c. oil into large skillet. Fry steaks 3-4 minutes per side. Place cooked steaks on wire rack on baking sheet in 225º oven to keep warm. Pour out all grease but 1 Tbsp. Whisk together 4 cups milk, 1/4 c. flour, 1 tsp. salt, and 1 tsp. pepper. Add to skillet. Cook on med-high heat, stirring constantly, for 10 minutes. Serve gravy with steaks.
