2 Tbsp. olive oil
1.5 lb. ground beef
1/2 onion, chopped
1 tsp. minced garlic
1 tsp. salt
1/2 tsp. pepper
one can condensed cheddar cheese soup
3/4 c. diced dill pickles ( I use drained dill relish)
3 Tbsp. ketchup
3.25 c. Bisquick mix
1 c. milk
1 c. grated sharp cheddar cheese

Preheat oven to 400º. Grease 9" baking dish.
Heat 1 Tbsp. olive oil in large skillet over med-high heat. Brown beef for 5-7 minutes. Pour off excess fat. Move meat to one half of skillet. Add remaining oil and onions to empty side. Cook about 5 minutes then push onions to side with beef. Add garlic to empty side and cook 30 seconds. Stir all together and season with salt and pepper. Add cheese soup, pickle, and ketchup. Pat mixture into baking dish. In a bowl, combine Bisquick and milk to form a dough. If dough is dry, add milk 1 Tbsp. at a time. Spread dough evenly over meat mixture. Sprinkle cheese on top of all. Bake about 15 minutes.
