2 Tbsp. oil
1 lb. ground turkey
1/2 onion, chopped
1 can condensed Fiesta cheese soup
1 can petite diced tomatoes (14.5 oz)
1 c. frozen yellow corn
2 c. Monterrey Jack cheese
2 c. crushed Fritos

Directions:
Directions:
Preheat oven to 400º. Heat oil in oven-safe large skillet. Add turkey and onion. Cook until done, about 5 minutes. Add soup, tomatoes with juice, and corn. Bring mixture to a boil. Cook for 5 minutes. Top with cheese and Fritos. Place in oven and back for 10 minutes.
