8 oz. short pasta
1 lb. chicken breast
2 tsp. olive oil
1/2 onion
2 tsp. minced garlic
1 tsp. dried Italian seasoning
2 med. zucchini
3 med. Roma tomatoes
1/4 c. shredded parmesan
salt and pepper

Directions:
Directions:
Bring water to boil in covered saucepan. Add pasta and cook, uncovered, following package directions.
Heat oil in deep skillet over med-high heat. Add chopped onion. Cut chicken into bite-sized pieces and add to skillet. Add garlic and Italian seasoning to skillet. Slice zucchini into 1/4" rounds and add to skillet. Cover pan and cook 5-6 minutes, or until chicken is no longer pink. Chop tomatoes. When chicken is done, remove from heat and stir in tomatoes. Drain pasta and add to skillet. Stir to combine. Season with salt and pepper. Sprinkle cheese on top.
