1 1/2 c. shortbread cookie crumbs ( I usually use Lorna Doone's)
1/4 c.packed brown sugar
1/4 tsp. ground nutmeg
1/4 c. melted margarine
1 qt. butter pecan ice cream
1 jar (12 oz.) caramel ice cream topping
1 c. chopped pecans (I use more)
1 qt. chocolate ice cream
1 jar (12 oz.) fudge ice cream topping
And of course Bailey's Irish Cream

CRUST: Lightly butter sides and bottom of 10" spring form pan. In small bowl mix shortbread crumbs, sugar, and nutmeg. Stir in melted margarine. Pat evenly on bottom of pan. Refrigerate.

FIRST LAYER: Spoon slightly softened butter pecan ice cream into medium size bowl and swirl in 1/2 cup Bailey's. Do not overmix. Pack into chilled crust. Pour caramel topping into small bowl and stir in 2 T. of Bailey's. Spoon over butter pecan layer. Sprinkle with half pecans. Freeze 1 hour.

SECOND LAYER: Spoon lightly softened chocolate ice cream into medium sized bowl and swirl in 1/2 cup Bailey's. Spread over 1st layer. Pour fudge topping into small bowl and stir in 2 T. Bailey's. Spoon over chocolate ice cream. Cover with foil and freeze until firm, about 6 hours or overnight.

SERVE: Remove sides of pan. Place bottom of spring form pan on serving plate. Garnish top with pecans. Let torte stand about 10 minutes before slicing. Makes about 16 servings, or depending how small or large you want to make the servings. After I get out the servings I want, I put back in the spring form pan and put back in freezer. Holds its shape better that way.

I use extra Bailey's in each layer, just a tad more. Have a coffee laced with Bailey's or on the rocks while you are making this yummy dessert :o)
