1 Beef Tenderloin Roast cut 2-4"
Salt and Pepper

Brandy Sauce:
2 tbls. Butter
3/4 c. Sliced Mushrooms
2 tbls. Chopped Scallions
2 tbls. Brandy
1 c. Beef Broth
1 tbls. Cornstarch

Directions:
Directions:
Place roast beef (not cut side down) on rack in broiler pan so surface of meat is 5-6" from heat. Broil 30-35 minutes for medium rare, turning once. or bake 375 - 400º oven for 15-20 minutes.

Meanwhile, heat butter in skillet over medium heat. Add mushrooms and scallots. Cook 2 minutes, or until tender, stirring occasionally. Stir in brandy. Cook 2 minutes, or until almost all liquid is gone.

Combine beef broth and cornstarch; stir into skillet. Bring to boil and cook 3 minutes until thickened and bubbly.

Carve tenderloin into 1/2" slices. Season with salt and pepper.
