8 cups zucchini
2/3 cup lemon juice
1 cup sugar 1 tsp Cinnamon ( I use a little more)
½ tsp Nutmeg

Directions:
Directions:
Prep: Peel zucchini, remove seed, slice or cube into small pieces In a large pan, med heat, add zucchini & lemon juice Cook 15-20 min until tender Add sugar, cinnamon and nutmeg . Simmer 1 min longer then take off stove to cool. Crust: 4 cup flour 2 cup sugar 1 ½ cup cold butter (cubed) 1 tsp cinnamon Prep: Combine flour & sugar in bowl, cut in butter until it resembles course crumbs. Stir ½ cup of this mixture into the zucchini mixture. Press half of crust into bottom of greased pan 15x10x1 Spread zucchini over top. Crumble remaining crust mixture on top. Sprinkle with cinnamon. Bake at 375 for 35-40 min until golden and bubbly 16 servings"
