1 tbsp. butter
1 bunch asparagus cut into 1 inch pieces
3 shallots thinly sliced
10 c. cubed day old bread
2 c. grated Gouda cheese
1/4 c. chopped fresh parsley
10 eggs
4 c. milk
1 tbsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
In large frying pan melt butter over medium heat and cook asparagus and shallots about 6 minutes.
Grease a 13 x 9 baking dish.
Toss together asparagus, shallots, bread, half the cheese and parsley.
Whisk eggs, milk, mustard, salt and pepper and pour over bread mixture. Press to submerge the bread.
Sprinkle with remaining cheese and then cover with plastic wrap.
Refrigerate for 1 hour. Can be made night before.
Uncover and bake in 350 oven for approximately 1 hour or until puffed, golden and set enough that center is cooked through.
Cool for 10 minutes and cut into squares.
Can be served as main dish with garden salad or as a side dish.
