1 lb. ground beef
1/2 c. chopped onion
2 cloves garlic, finely chopped
2 tbsp. chopped green onion
1/3 c. diced green chiles
21 oz. (2 cans) cream of mushroom
1 pkg. flour tortillas
16 oz. sharp or medium cheddar cheese, shredded
Salt and pepper to taste
13"x9" casserole dish

Preheat Oven to 350º. In a skillet, heat oil and brown ground beef. Do not drain grease - add onion, garlic, green onion, and chile. Saute until tender and onion is translucent. Mix in cream of mushroom and let simmer for 10 minutes.
Grease casserole dish with butter, and place 1 layer of tortillas in the bottom. Spoon some of the skillet mixture onto tortillas and smooth out a thin layer, then add some shredded cheese. Add two more of the same layers ending with the cheese on top. Place casserole in oven for 25 minutes. Let cool for at least 10 minutes before cutting and serving.
