1 egg
1 c all purpose flour
3/4 c milk
2 T oil (i use canola)
1 T sugar
3 t baking powder
1/2 t salt

Directions:
Directions:
Beat egg with fork until fluffy,1-2 minutes;beat in remaining ingredients
just until smooth.Grease heated griddle with veg.oil.To test griddle to see if it is hot enough,sprinkle a few drops of water ,if bubbles skitter around,heat
is just right. I pour my batter into a small liquid measuring cup and pour onto
hot griddle.Cook pancakes until bubbles sink inward and pancake is puffed
and dry around edges,Turn and cook other side until golden brown.This is a
small recipe so you might want to double or triple it.Serve hot off the griddle
with butter and warm maple syrup. YUM!!!

These pancakes as simple as they are have been my grandchildren
favorites.They love to see who can eat the most,so you might want
